A flavorful and hearty skillet combining seasoned ground beef, fresh vegetables, and eggs, perfect for a quick and satisfying meal.

Ingredients

Ground Beef

  • 1 pound Ground Beef

Eggs

  • 4 large Eggs

Bell Peppers

  • 1 red and 1 green Bell Peppers (diced)

Onion

  • 1 medium Onion (diced)

Garlic

  • 2 cloves Garlic (minced)

Tomatoes

  • 2 medium Tomatoes (diced)

Jalapeño

  • 1 small Jalapeño (sliced (optional))

Black Beans

  • 1 cup Black Beans (drained and rinsed)

Cheddar Cheese

  • 1 cup Cheddar Cheese (shredded)

Olive Oil

  • 2 tablespoons Olive Oil

Cumin

  • 1 teaspoon Cumin

Paprika

  • 1 teaspoon Paprika

Chili Powder

  • 1 teaspoon Chili Powder

Salt

  • 1 teaspoon Salt (or to taste)

Black Pepper

  • ½ teaspoon Black Pepper (or to taste)

Cilantro

  • Fresh Cilantro (chopped for garnish)

Avocado

  • 1 Avocado (sliced for serving)

Lime

  • Wedges Lime (for serving)

Instructions 

  • Heat olive oil in a skillet over medium heat and cook the diced onion and garlic until fragrant.
  • Add ground beef and cook until browned, then stir in diced tomatoes, bell peppers, jalapeño, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes.
  • Stir in black beans and cook for another 2 minutes. Make small wells in the mixture and crack eggs into each well.
  • Cover and cook until eggs are set, about 5 minutes. Sprinkle with shredded cheese and garnish with cilantro.
  • Serve hot with sliced avocado and lime wedges on the side.

Notes

For extra heat, add more jalapeño or hot sauce as desired.
