Instructions
Heat olive oil in a skillet over medium heat and cook the diced onion and garlic until fragrant.
Add ground beef and cook until browned, then stir in diced tomatoes, bell peppers, jalapeño, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes.
Stir in black beans and cook for another 2 minutes. Make small wells in the mixture and crack eggs into each well.
Cover and cook until eggs are set, about 5 minutes. Sprinkle with shredded cheese and garnish with cilantro.
Serve hot with sliced avocado and lime wedges on the side.
Notes
For extra heat, add more jalapeño or hot sauce as desired.
