Ingredients

Base Ingredients

  • 2 ounces Milk Substitute (or Milk)
  • 1.5 scoops Protein Powder (Vanilla)
  • 3 tablespoons Coconut Flour
  • 0.5 teaspoon Ground Cinnamon
  • 0.25 teaspoon Pumpkin Pie Spice
  • 4.5 tablespoons Liquid Egg Whites (or 1 ½ Large Egg Whites)
  • 1 teaspoon Light Brown Sugar
  • 1 tablespoon Sweetener
  • 4.5 ounces Carrots
  • 0.5 teaspoon Baking Powder
  • 2.65 ounces Greek Yogurt (Fat Free Vanilla)
  • 4 tablespoons Cream Cheese (Fat Free)
  • 1 tablespoon Sweetener

Instructions 

  • Combine all ingredients except carrots in a blender or food processor.
  • Blend until smooth, then add carrots and pulse until shredded but not fully mixed.
  • Divide batter into two microwave-safe dishes coated with non-stick spray.
  • Microwave each for 30 seconds, stir, then microwave for an additional 60-90 seconds until cooked.
  • Prepare frosting by mixing all frosting ingredients until smooth.
  • Top the carrot cakes with frosting and serve.
