Delicious and quick protein-packed whoopie pies made in the microwave for a satisfying treat.

Ingredients

Eggs & Dairy

  • 1 large Large Whole Egg
  • 2.65 ounces Greek Yogurt (Vanilla Fat Free)

Dry Ingredients

  • 3 tablespoons Coconut Flour
  • 2 tablespoons Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 1.5 scoops Protein Powder (Chocolate)
  • 1.5 tablespoons Chocolate Chips (Semi-Sweet)
  • ¼ teaspoon Baking Powder

Fruits & Vegetables

  • ½ banana Banana

Dairy & Alternatives

  • ½ cup Cottage Cheese (Fat Free)
  • 2.65 ounces Greek Yogurt (Vanilla Fat Free)
  • ½ teaspoon Vanilla Extract

Instructions 

  • Melt the chocolate chips.
  • Mix all ingredients for the whoopie pies in a bowl.
  • Pour batter into a greased mug and microwave for 30 seconds, stir, then microwave for 90 seconds.
  • Cut the mug cake into 4 pieces.
  • Mix filling ingredients until smooth, then spread between two cake pieces.

Notes

Use non-stick spray for easier removal from the mug.
