Delight in these homemade mini apple pies with flaky pastry and spiced apple filling, perfect for a cozy treat.
Ingredients
Filling

apples, peeled and chopped

Pastry

frozen shortcrust pastry, thawed

egg, whisked for glazing
Instructions
Simmer apples, butter, sugar, cinnamon, nutmeg, and lemon juice until softened.
Mix cornflour with cold water, then stir into apples until thickened. Cool.
Preheat oven to 180°C. Cut out pastry rounds and strips for lattice.
Fill pastry rounds with apple mixture, lattice with strips, seal edges, and brush with egg.
Bake for 20-25 minutes until golden. Cool slightly before serving.
Notes
Use a sharp knife to cut pastry for clean edges.
