Delight in these homemade mini apple pies with flaky pastry and spiced apple filling, perfect for a cozy treat.

Ingredients

Filling

  • 2 pieces apples, peeled and chopped (small cubes)
  • 40 g salted butter
  • 50 g brown sugar
  • 1-2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp lemon juice
  • 1/2 tsp cornflour
  • 3 tsp cold water

Pastry

  • 2 sheets frozen shortcrust pastry, thawed
  • 1 egg egg, whisked for glazing

Instructions 

  • Simmer apples, butter, sugar, cinnamon, nutmeg, and lemon juice until softened.
  • Mix cornflour with cold water, then stir into apples until thickened. Cool.
  • Preheat oven to 180°C. Cut out pastry rounds and strips for lattice.
  • Fill pastry rounds with apple mixture, lattice with strips, seal edges, and brush with egg.
  • Bake for 20-25 minutes until golden. Cool slightly before serving.

Notes

Use a sharp knife to cut pastry for clean edges.
