Delicious and nutritious mini quiches packed with sweet potatoes, spinach, and cheese, perfect for a quick breakfast or snack.

Ingredients

Vegetables

  • 2 cups Spinach (Baby, Chopped)
  • 2 large Large Whole Eggs
  • 9 tablespoons Liquid Egg Whites (or 3 Large Egg Whites)
  • 8 ounces Milk Substitute (or Fat Free Milk)
  • 1 cup Cottage Cheese (Fat Free)
  • 4 tablespoons Coconut Flour
  • 2 ounces Feta Cheese
  • Black Pepper (Your Choice)
  • Vegetables (Chopped (Your Choice))
  • 2 medium Sweet Potatoes (Chopped (Mine totaled 300g))
  • 8 ounces Chicken (Precooked (2 Ounces Per Tin))
  • ½ cup Cheese (Your Favorite)

Instructions 

  • Chop vegetables and mix all ingredients except sweet potatoes, chicken, and cheese.
  • Coat tins with non-stick spray, add chopped sweet potatoes at the bottom, then chicken on top.
  • Pour mixture into tins, top with cheese, and bake at 350°F (176°C) for 35-40 minutes.

Notes

Use a non-stick spray for easy removal and enjoy!
