Delight in these wholesome, berry-filled oatmeal bars perfect for a quick breakfast or snack.

Ingredients

Dough and topping

  • 1.5 cups quick oats
  • 1.5 cups flour
  • 1 cup brown sugar, lightly packed
  • 0.5 cup butter, melted
  • 1.5 tsp cinnamon
  • 1 tsp vanilla extract
  • 0.5 tsp baking powder
  • 0.5 tsp sea salt
  • 2.5 cups mixed berries, fresh or frozen (thawed if frozen)
  • 0.5 lemon juice of 1/2 lemon
  • 1 tsp corn starch
  • 3 T sugar (more if berries are tart)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix berries, lemon juice, sugar, and corn starch; set aside.
  • Combine oats, flour, sugar, cinnamon, salt, and baking powder; add melted butter and vanilla.
  • Press 2/3 of oat mixture into an 8x8 inch pan, add berry mixture, then top with remaining oats.
  • Bake for 28-32 minutes until berries bubble and top is browned. Cool before slicing.

Notes

Use fresh or thawed frozen berries for best results.
