Ingredients

Dry Ingredients

  • 250 g Bob's Red Mill Gluten-Free 1-to-1 Baking Flour
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 0.5 tsp fine sea salt

Wet Ingredients

  • 1.5 cups mashed, ripe banana
  • 0.5 cup olive oil
  • 2 tsp vanilla extract
  • 0.5 cup maple syrup (room temperature)

Add-ins

  • 0.5 cup chopped walnuts

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
  • Mix dry ingredients in a bowl. In a separate bowl, combine wet ingredients.
  • Fold wet into dry until just combined. Stir in walnuts.
  • Pour batter into pan and smooth the top. Bake for 55 minutes.
  • Cool in pan for 5-10 minutes, then transfer to a wire rack. Slice and serve warm.

Notes

For extra flavor, add a dash of cinnamon on top before baking.
