A flavorful and colorful dish combining spiced chicken, fresh vegetables, and fluffy couscous for a satisfying meal.

Ingredients

Protein

  • 1.5 lb Boneless skinless chicken breast (chopped)
  • 1 Tbsp Moroccan spice mix (store bought or homemade)
  • 1/4 Cup Tomato paste
  • 1 Tbsp Olive Oil
  • 3/4 Cup Broth

Vegetables

  • 1 Cup Cucumber (diced)
  • 1 Cup Cherry Tomatoes (quartered)
  • 1 Red Onion Sliced or diced

Dairy & Herbs

  • 1/3 Cup Greek yogurt
  • 2 Tbsp Fresh Chopped parsley

Spices

  • 1 1/2 Tbsp Ground cinnamon
  • 1/2 Tsp Ground ginger
  • 1/2 Tsp Ground nutmeg
  • 1/2 Tsp Cayenne pepper
  • 1/2 Tsp Sea Salt

Instructions 

  • Bring 1 1/2 cups of salted water or stock to a boil, add couscous, cover, and remove from heat.
  • Let couscous steam until fluffy, then set aside.
  • Mix chicken with Moroccan spice and olive oil, then cook in a skillet for 3-4 minutes until browned.
  • Add tomato paste and broth to chicken, cook until sauce thickens and chicken is cooked through, about 5-7 minutes.
  • Divide couscous into bowls, top with cooked chicken, fresh vegetables, yogurt, and parsley. Serve and enjoy!

Notes

You can customize the vegetables or spice level to your preference.
