1.5lbBoneless skinless chicken breast (chopped)
1TbspMoroccan spice mix(store bought or homemade)
1/4CupTomato paste
1TbspOlive Oil
3/4CupBroth
Vegetables
1CupDiced cucumber
1CupCherry tomatoes (quartered)
1Red OnionSliced or diced
Dairy & Herbs
1/3CupGreek yogurt
2TbspFresh chopped parsley
1 1/2TbspGround cinnamon
Instructions
Bring 1.5 cups of broth to a boil, add couscous, cover, and let steam off heat.
Cook seasoned chicken in a skillet over medium-high heat for 3-4 minutes, then add tomato paste and broth, simmer until cooked and sauce thickens (5-7 min).
Fluff couscous, divide into bowls, top with vegetables and chicken, add yogurt and parsley. Serve.
