A flavorful and colorful dish combining spiced chicken, fresh vegetables, and fluffy couscous for a satisfying meal.

Ingredients

Protein

  • 1.5 lb Boneless skinless chicken breast (chopped)
  • 1 Tbsp Moroccan spice mix (store bought or homemade)
  • 1/4 Cup Tomato paste
  • 1 Tbsp Olive Oil
  • 3/4 Cup Broth

Vegetables

  • 1 Cup Diced cucumber
  • 1 Cup Cherry tomatoes (quartered)
  • 1 Red Onion Sliced or diced

Dairy & Herbs

  • 1/3 Cup Greek yogurt
  • 2 Tbsp Fresh chopped parsley
  • 1 1/2 Tbsp Ground cinnamon

Instructions 

  • Bring 1.5 cups of broth to a boil, add couscous, cover, and let steam off heat.
  • Cook seasoned chicken in a skillet over medium-high heat for 3-4 minutes, then add tomato paste and broth, simmer until cooked and sauce thickens (5-7 min).
  • Fluff couscous, divide into bowls, top with vegetables and chicken, add yogurt and parsley. Serve.

Notes

You can customize the vegetables or spice level to your preference.
