Delight in these flavorful Moroccan-inspired chickpea hand pies, packed with aromatic spices and hearty vegetables.

Ingredients

oil and liquids

  • as needed extra virgin olive oil (or water)
  • 1 medium brown onion (chopped in small cubes)
  • 3 cloves garlic (peeled and chopped finely)
  • 2 medium white potatoes (peeled and chopped in small cubes)
  • 2 medium carrots (peeled and chopped in small cubes)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground turmeric
  • 400 g canned diced tomatoes
  • 400 g canned chickpeas (liquid reserved (~250g cooked chickpeas))
  • 35 g garden peas

broth and seasonings

  • as needed vegetable broth (or water)
  • to taste salt and pepper
  • 6 large wraps (of choice)

Instructions 

  • Sauté chopped onion and garlic in oil until fragrant.
  • Add chopped potatoes, carrots, and spices; cook for a few minutes.
  • Stir in diced tomatoes, chickpeas, and peas; simmer with broth until vegetables are tender.
  • Season with salt and pepper to taste.
  • Fill wraps with the filling, fold, and bake or pan-fry until golden.

Notes

For a vegan option, ensure wraps are plant-based and avoid added dairy.
