A rich and decadent chocolate mousse cake that combines a moist cake base with a luscious chocolate mousse topping, perfect for special occasions.

Ingredients

Dry ingredients

  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water

Chocolate mousse topping

  • 1 1/2 cups heavy cream
  • 1 cup chocolate chips or chopped chocolate
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients and add wet ingredients; combine well.
  • Pour batter into a greased cake pan and bake for 30 minutes. Let cool.
  • Heat boiling water and add to cocoa mixture to make the mousse topping.
  • Whip heavy cream with sugar and vanilla until soft peaks form, then fold in melted chocolate.
  • Spread mousse over cooled cake and chill before serving.

Notes

For a richer flavor, use high-quality chocolate and let the mousse chill thoroughly before serving.
