Delicious and healthy no-bake brownie balls perfect for a quick treat or snack. Made with dates, cocoa, and coated in melted chocolate, they are easy to prepare and customizable.
2tbspoat flour or ground almonds(substitute gluten free if needed)
2tbspnut butter(almond, peanut, cashew, or biscoff)
2tbsphoney or maple syrup(use maple syrup for vegan)
1tbspground seeds or protein powder
1.5tbspcocoa powder
1tspvanilla extract
Pinchsalt
½cuppuffed rice cereal(substitute gluten free if needed)
100gchocolate melted(milk or dark, dairy free if needed)
¼cuppuffed rice cereal(for coating, gluten free if needed)
Instructions
If using dried dates, soak in boiling water for 5 minutes, then drain. Blend dates with other ingredients except puffed rice until smooth. Add puffed rice and blend briefly.
Divide mixture into 9 balls and chill in the fridge for 10 minutes.
Melt chocolate gently, stir in puffed rice, then coat each ball with chocolate. Chill for 20 minutes before serving.

Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
