These delicious no-bake cinnamon roll bites are quick to prepare and perfect for a healthy, sweet treat. Made with wholesome ingredients, they offer the comforting flavors of cinnamon rolls in a bite-sized form.

Ingredients

Dough

  • 3/4 cup oat flour (ground from gluten-free rolled oats)
  • 3/4 cup almond flour
  • 1/8 tsp sea salt
  • 2 ½ Tbsp coconut oil (softened or melted)
  • 2 Tbsp maple syrup
  • 3/4 tsp vanilla extract
  • 1 cup pitted dates (about 11 medjool dates (~200 g))
  • 1 Tbsp coconut oil (softened or melted)
  • 1 ½ Tbsp cinnamon
  • 1/8 tsp sea salt
  • 1/2 tsp vanilla extract
  • 1/2 - 1 Tbsp water (start with less, add more if needed)

Instructions 

  • Combine oat flour, almond flour, and salt in a food processor. Add coconut oil, maple syrup, and vanilla; pulse until combined and it starts to come together.
  • Shape the dough into a rectangle on parchment paper, then roll into a ~7-inch square about 1/6 inch thick. Refrigerate while preparing filling.
  • Blend dates, coconut oil, cinnamon, salt, vanilla, and water in the food processor until a smooth paste forms.
  • Spread the cinnamon filling over the dough, then roll up starting from the bottom. Slice into 12 pieces.
  • Enjoy immediately or refrigerate for 30 minutes for a colder treat.

Notes

Store leftovers in the refrigerator for up to 1 week or freeze for 1 month.
