These delicious no-bake cinnamon roll bites are quick to prepare and perfect for a healthy, sweet treat. Made with wholesome ingredients, they offer the comforting flavors of cinnamon rolls in a bite-sized form.

3/4cupoat flour(ground from gluten-free rolled oats)
3/4cupalmond flour
1/8tspsea salt
2 ½Tbspcoconut oil(softened or melted)
2Tbspmaple syrup
3/4tspvanilla extract
1cuppitted dates(about 11 medjool dates (~200 g))
1Tbspcoconut oil(softened or melted)
1 ½Tbspcinnamon
1/8tspsea salt
1/2tspvanilla extract
1/2 - 1Tbspwater(start with less, add more if needed)
Instructions
Combine oat flour, almond flour, and salt in a food processor. Add coconut oil, maple syrup, and vanilla; pulse until combined and it starts to come together.
Shape the dough into a rectangle on parchment paper, then roll into a ~7-inch square about 1/6 inch thick. Refrigerate while preparing filling.
Blend dates, coconut oil, cinnamon, salt, vanilla, and water in the food processor until a smooth paste forms.
Spread the cinnamon filling over the dough, then roll up starting from the bottom. Slice into 12 pieces.
Enjoy immediately or refrigerate for 30 minutes for a colder treat.
