A delicious and healthy vegan snack made with dates, nuts, and seeds, perfect for a quick energy boost.

Ingredients

Dried Fruits

  • 2 cups dates, seeds removed (Medjool)
  • 1 cup walnut
  • 0.5 cup almond
  • 0.5 cup grated coconut
  • A pinch salt
  • 0.5 cup mixed seeds (sunflower and pumpkin)

Instructions 

  • Clean the dates and remove seeds.
  • In a food processor, pulse walnuts, almonds, and coconut until broken into pieces.
  • Add seeds and dates, pulse until crushed and well mixed.
  • Line a pan with parchment paper, pour mixture, and press with a spatula.
  • Top with seeds, refrigerate until firm, then cut into bars.
