Ingredients

Gelatin

  • 6 oz raspberry-flavored Jello
  • 1.5 cups boiling water
  • 1 cup cranberry juice (can be a juice cocktail)
  • 0.5 cup ice
  • 0.5 cup mandarins (chopped)
  • 0.5 cup raspberries (fresh or frozen)
  • 1 cup Homemade Orange Cranberry Sauce (or store-bought)
  • 16 oz cream cheese (softened at room temp; two, 8-oz packages)
  • 2 large orange zest
  • 2 tsp vanilla extract
  • 1.5 cups powdered sugar
  • 3 cups heavy whipping cream (well-chilled)
  • 3 cups chopped mandarins

Cookies

  • 24 ladyfinger cookies ladyfinger cookies
  • 1.5 cups orange juice
  • 0.25 cup orange liqueur
  • 0.25 cup pomegranate arils
  • 3-4 sprigs fresh rosemary

Instructions 

  • Dissolve the Jello in boiling water, then add cranberry juice and ice to cool.
  • Mix softened cream cheese with orange zest, vanilla, and powdered sugar until smooth.
  • Whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  • Layer ladyfingers soaked in orange juice and liqueur with fruit and cream mixture in a trifle dish. Repeat layers and top with berries, pomegranate, and rosemary.
  • Chill for at least 2 hours before serving.

Notes

For best flavor, prepare the trifle a day ahead to allow flavors to meld.
