Delicious and easy-to-make no-bake peanut butter bars perfect for a quick treat.

Ingredients

Dough

  • 0.5 cup butter, softened
  • 2 cup creamy peanut butter
  • 3.5 cup powdered confectioners sugar
  • 1.5 tsp vanilla extract

Chocolate topping

  • 2 cup chocolate chips or chunks
  • 1 tbsp butter or coconut oil

Instructions 

  • Mix butter, peanut butter, powdered sugar, and vanilla until smooth. Press into a parchment-lined 9x13-inch pan.
  • Combine chocolate chips and 1 tbsp butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring until melted (~1.5 min).
  • Pour melted chocolate over the peanut butter layer and spread evenly.
  • Let sit at room temperature for 30-60 minutes until chocolate sets. Refrigerate for at least 1 hour before slicing.
  • Lift bars using parchment paper, transfer to a cutting board, and cut into squares.
