A vibrant and flavorful noodle salad featuring a creamy sesame peanut dressing, perfect for a quick, healthy meal.

Ingredients

Dressing

  • 0.25 cup peanut butter (preferably smooth)
  • 1 tbsp sesame oil (toasted)
  • 1 tbsp canola oil (or other neutral oil)
  • 2 tbsp soy sauce
  • 2 tbsp sweet chilli sauce
  • 1 tbsp sriracha (adjust spiciness to taste)
  • 2 tbsp lime juice (sub rice or cider vinegar)
  • 1 clove garlic (minced)
  • 2 to 4 tbsp water (if needed)

Noodles

  • 350 g fresh egg noodles (about 4 cups, packed)
  • 1.5 cups carrot (julienned)
  • 2 cups beansprouts
  • 1.5 cups green beans (halved)
  • 1 large red bell pepper (finely sliced)
  • 3 stems green onion (finely sliced on the diagonal)
  • 1 tbsp white sesame seeds (preferably toasted)

Instructions 

  • Cook noodles according to package instructions, then drain, rinse, and cool.
  • Mix dressing ingredients, adding water to loosen as needed.
  • Steam or boil green beans until tender but crisp, then cool.
  • Combine noodles, vegetables, and dressing in a large bowl, toss well.
  • Garnish with toasted sesame seeds and serve at room temperature.

Notes

Store leftovers in the fridge for up to 4 days.
