Delicious and chewy oatmeal bars packed with coconut and chocolate chips, perfect for a quick snack or dessert.

Ingredients

Dry ingredients

  • 1.5 cups rolled oats
  • 0.75 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.75 tsp baking powder
  • 0.25 tsp cinnamon (optional)
  • 1 tbsp cornstarch
  • 0.25 tsp salt

Wet ingredients

  • 3/4 cups butter, melted and slightly cooled
  • 3 tbsp flavourless oil (canola oil used)
  • 1 cup light brown sugar
  • 2 eggs room temperature
  • 1 tbsp vanilla
  • 3 tbsp maple syrup or table syrup
  • 1 cup shredded coconut (unsweetened)
  • 0.5 cup mini chocolate chips plus more for topping

Instructions 

  • Preheat oven to 350°F (170°C). Line pan with parchment paper and lightly grease sides.
  • Mix dry ingredients: flour, cinnamon, oats, cornstarch, baking powder, baking soda, coconut, and salt.
  • In a large bowl, combine melted butter, oil, and brown sugar; beat until well mixed. Add eggs and whisk until pale and bubbly. Mix in vanilla and maple syrup.
  • Gradually add dry ingredients to wet, mixing until just combined. Fold in chocolate chips. Spread dough in prepared pan and top with extra chips if desired.
  • Bake for 25-35 minutes until edges are golden and a toothpick inserted comes out clean. Cool before slicing.

Notes

For best results, do not over-mix the batter to keep bars chewy and tender.
