Ingredients

Flour

  • 3.5 cups all-purpose flour (440 g)

Olives

  • 1 cup pitted olives, chopped (150 g)

Water

  • 1.5 cups warm water (360 ml at 110°F/43°C)

Salt

  • 2 teaspoons salt

Herbs

  • 1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)
  • 1 teaspoon dried oregano

Sugar

  • 1 teaspoon sugar

Yeast

  • 1 packet active dry yeast (2.25 teaspoons)

Olive Oil

  • 2 tablespoons olive oil

Instructions 

  • Activate yeast by mixing with warm water and sugar; let foam for 8 minutes.
  • Combine flour, salt, and herbs; create a well for yeast mixture and olive oil.
  • Add olives and knead until smooth; let rise in a warm, oiled bowl for 90 minutes.
  • Punch down dough, shape into a loaf, and place on parchment-lined baking sheet.
  • Allow secondary rise, then bake at 400°F (200°C) until golden and hollow-sounding.
  • Cool on a wire rack before slicing and serving.

Notes

For best flavor, use a mix of black and green olives.
