Instructions
Activate yeast by mixing with warm water and sugar; let foam for 8 minutes.
Combine flour, salt, and herbs; create a well for yeast mixture and olive oil.
Add olives and knead until smooth; let rise in a warm, oiled bowl for 90 minutes.
Punch down dough, shape into a loaf, and place on parchment-lined baking sheet.
Allow secondary rise, then bake at 400°F (200°C) until golden and hollow-sounding.
Cool on a wire rack before slicing and serving.
Notes
For best flavor, use a mix of black and green olives.
