A flavorful and easy one-pan pasta dish featuring caramelized onions, sun dried tomatoes, and fresh herbs, perfect for a quick weeknight dinner.

Ingredients

Vegetables

  • 5 small yellow onions (sliced, or 3 large)
  • 1 head garlic (top sliced off)
  • 0.5 cup sun dried tomatoes (chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley
  • 0.5 cup coconut milk
  • 3 cups farfalle pasta (cooked)
  • 1 handful fresh parsley (chopped)
  • 1 handful fresh basil (chopped)
  • 1 lemon lemon (juiced)

Instructions 

  • Preheat oven to 400F. Mix onions, sun dried tomatoes, paprika, salt, pepper, parsley in a casserole dish. Add garlic head, drizzle with oil, cover, and roast for 1 hour, tossing halfway.
  • Cook pasta according to package, reserving some pasta water.
  • Remove garlic, squeeze out cloves, then stir into the dish with herbs, lemon juice, coconut milk, pasta, and reserved water. Serve and enjoy!

Notes

Use high-quality sun dried tomatoes for best flavor.
