0.5cupsun dried tomatoes(chopped)

1tspdried parsley
0.5cupcoconut milk
3cupsfarfalle pasta(cooked)
1handfulfresh parsley(chopped)
1handfulfresh basil(chopped)
1lemonlemon(juiced)
Instructions
Preheat oven to 400F. Mix onions, sun dried tomatoes, paprika, salt, pepper, parsley in a casserole dish. Add garlic head, drizzle with oil, cover, and roast for 1 hour, tossing halfway.
Cook pasta according to package, reserving some pasta water.
Remove garlic, squeeze out cloves, then stir into the dish with herbs, lemon juice, coconut milk, pasta, and reserved water. Serve and enjoy!
