A flavorful and easy one-pan meal featuring tender chicken thighs, crispy potatoes, and aromatic herbs, all cooked to perfection in the oven.

Ingredients

Meat

  • 6 pieces boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes (halved)

Oils & Fats

  • 3 tbsp olive oil
  • 2 tbsp unsalted butter

Spices & Herbs

  • 4 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 0.5 tsp chili flakes (optional)

Liquids

  • 0.5 cup low-sodium chicken broth
  • 1/2 lemon juice of 1/2 lemon

Fresh Herbs & Garnishes

  • 2 tbsp fresh parsley (chopped, for serving)

Instructions 

  • Preheat oven to 400°F (200°C). Season chicken with spices. Sear in oil until golden, then set aside.
  • Sauté garlic in the same skillet with butter. Add potatoes, herbs, salt, and pepper. Pour in chicken broth and deglaze.
  • Nestle chicken back into the skillet. Transfer to oven and bake for 25–30 minutes until cooked through and potatoes are tender.
  • Remove from oven, drizzle with lemon juice, sprinkle with parsley, and serve straight from the pan.

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
