Ingredients

Meat

  • 6 pieces boneless, skinless chicken thighs

Vegetables

  • 1.5 lbs baby potatoes (halved)

Oils & Fats

  • 3 tbsp olive oil
  • 2 tbsp unsalted butter

Spices & Herbs

  • 4 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 0.5 tsp chili flakes (optional)

Liquids

  • 0.5 cup low-sodium chicken broth
  • 1/2 lemon juice of 1/2 lemon

Fresh Herbs

  • 2 tbsp fresh parsley (chopped, for serving)

Instructions 

  • Preheat oven to 400°F (200°C). Season chicken with spices. Sear in skillet 3–4 mins per side. Sauté garlic, add potatoes and herbs. Pour broth, nestle chicken, then bake 25–30 mins. Finish with lemon juice and parsley.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
