A creamy, flavorful one-pot dish combining Cajun-spiced chicken, tender broccoli, and pasta in a rich Alfredo sauce.

Ingredients

Vegetables

  • 8 ounces broccoli florets (cut into bite-sized pieces)
  • 1 medium shallot (finely diced)
  • 3 cloves garlic (minced)
  • 2 ounces parmesan cheese (freshly grated)

Protein

  • 1 ¼ pounds boneless skinless chicken breasts (cubed into 1 inch pieces)
  • 1 ½ - 2 tablespoons Cajun seasoning
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons water

Dairy & Broth

  • 2 tablespoons unsalted butter
  • 2 cups chicken stock
  • 2 cups heavy whipping cream
  • ½ pound dried penne rigate pasta (or similar pasta)
  • 1 tablespoon fresh parsley (finely chopped)

Instructions 

  • Cook broccoli, shallot, and garlic; sear chicken with Cajun seasoning; then steam broccoli.
  • Sauté shallots and garlic in butter; add broth, cream, and pasta; simmer until pasta is just under al dente.
  • Return chicken and broccoli to pan; add Parmesan and simmer until sauce thickens. Garnish with parsley and serve.

Notes

Adjust Cajun seasoning to taste and serve immediately for best flavor.
