A quick and flavorful one-pot meal combining tender chicken with colorful vegetables, seasoned with Cajun spices.

Ingredients

Protein

  • 1 lb skinless, boneless chicken breast, cut into 1-inch pieces

Vegetables

  • 2 pieces zucchini, sliced
  • 2 red bell peppers chopped into chunks
  • 1 broccoli crown broken into florets
  • 0.5 onion sliced
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 0.25 cup low-sodium chicken broth
  • 1 tablespoon fresh chopped parsley, for garnish
  • 0.5 teaspoon red chili pepper flakes, optional

Instructions 

  • Season chicken with salt, pepper, olive oil, and Cajun seasoning; toss to coat.
  • Cook chicken in a skillet over medium heat for 5-7 minutes until cooked through; remove and set aside.
  • Sauté onion in the same skillet for 2 minutes, then add broccoli, zucchini, and bell peppers; cook until crisp-tender.
  • Deglaze with chicken broth, then return chicken to skillet and stir to combine. Garnish with parsley and chili flakes if desired.

Notes

Feel free to add more chili flakes for extra heat or adjust seasoning to taste.
