This one-pot chicken skillet combines seasonal vegetables and flavorful herbs for a quick, healthy, and delicious meal.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts

Oil

  • 2 tablespoons olive oil

Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Vegetables

  • 2 cups mixed seasonal vegetables (carrots, bell peppers, zucchini)

Broth & Herbs

  • 1 cup low-sodium chicken broth
  • 1 tablespoon dried Italian herbs (basil, oregano, thyme)
  • to taste Salt and pepper
  • 1 tablespoon lemon juice

Garnish

  • optional Fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear for 5-7 minutes per side. Remove and set aside.
  • Add chopped onion and garlic to the same skillet; cook until fragrant, about 2-3 minutes.
  • Toss in mixed vegetables; sauté for 5 minutes until slightly softened. Return chicken to skillet.
  • Pour in chicken broth, sprinkle herbs, stir, then cover and simmer for 15-20 minutes until chicken is cooked through. Finish with lemon juice and garnish with parsley.

Ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
