A quick and flavorful one-pot meal combining tender chicken, fragrant garlic, and fluffy rice for a satisfying dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Aromatics

  • 4 cloves fresh garlic, minced

Grains

  • 1 cup long-grain white rice

Broth & Sauces

  • 2 cups low-sodium chicken broth
  • 3 tbsp unsalted butter
  • 2 tbsp fresh parsley or thyme, chopped
  • 1 tbsp olive oil
  • 2 tbsp low-sodium soy sauce

Seasonings

  • to taste Salt and pepper

Instructions 

  • Chop garlic, measure rice, and trim chicken.
  • Heat oil and butter in a large pot. Sauté garlic, then cook chicken until browned.
  • Add rice, broth, and soy sauce; stir well.
  • Cover and simmer on low for 20 minutes until rice is cooked.
  • Remove from heat, stir in herbs, and serve.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
