A flavorful and easy one-pot meal combining tender chicken, fragrant garlic, and perfectly cooked rice in a rich butter and broth sauce.

4piecesboneless, skinless chicken thighs or breasts
2tablespoonsbutter
4clovesgarlic, minced
1smallonion, finely chopped
1cuplong-grain white rice
2cupschicken broth
1teaspoonsalt
½teaspoonblack pepper
1teaspoondried parsley (optional)
½teaspoonpaprika (optional)
1tablespoonolive oil
Instructions
Pat the chicken dry, season with salt, pepper, and paprika.
Heat olive oil and half of the butter in a large pot over medium heat, then brown the chicken on both sides. Remove and set aside.
Add remaining butter and sauté onion until soft, then stir in garlic and cook until fragrant.
Stir in rice, cook briefly, then pour in chicken broth, scraping the bottom of the pot. Return chicken on top, cover, and simmer until rice is tender and liquid is absorbed.
Let rest covered for a few minutes, then fluff with a fork, garnish with parsley if desired, and serve warm.
