One-Pot Garlic Butter Chicken and Rice

A flavorful and easy one-pot meal combining tender chicken, fragrant garlic, and perfectly cooked rice in a rich butter and broth sauce.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken thighs or breasts
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley (optional)
  • ½ teaspoon paprika (optional)
  • 1 tablespoon olive oil

Instructions 

  • Pat the chicken dry, season with salt, pepper, and paprika.
  • Heat olive oil and half of the butter in a large pot over medium heat, then brown the chicken on both sides. Remove and set aside.
  • Add remaining butter and sauté onion until soft, then stir in garlic and cook until fragrant.
  • Stir in rice, cook briefly, then pour in chicken broth, scraping the bottom of the pot. Return chicken on top, cover, and simmer until rice is tender and liquid is absorbed.
  • Let rest covered for a few minutes, then fluff with a fork, garnish with parsley if desired, and serve warm.

Notes

Ensure the chicken is dry before browning for a better crust.
