One Pot Taco Beef Pasta

A quick and flavorful one-pot meal combining seasoned beef, pasta, and vegetables for a satisfying dinner.

Ingredients

Seasoning

  • 1.5 teaspoon cumin
  • 1.5 teaspoon paprika
  • 1.5 teaspoon Mexican Chili Chilli powder
  • 2 teaspoons oregano
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.5 teaspoon cayenne pepper (can add more or less depending on your preferred spice level)
  • 455 g extra lean ground beef mince

Vegetables

  • 1 piece onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 red red pepper (diced)
  • 1 green green pepper (diced)

Liquids and Canned Goods

  • 180 ml passata
  • 130 g sweetcorn

Pasta and Broth

  • 200 g uncooked fusilli pasta
  • 500 ml beef stock

Dairy

  • 3 tbsp light cream cheese
  • 60 g cheddar (grated)

Garnish

  • 2 spring onions sliced
  • a handful coriander (chopped, optional)

Instructions 

  • Add ground beef to a deep frying pan over medium-high heat and cook until browned. Add taco seasoning ingredients, stir to coat, then remove and set aside.
  • Spray the pan with cooking oil, then fry onion, garlic, and peppers for a few minutes until softened.
  • Return beef to pan, add passata and corn, then stir. Add uncooked pasta and beef stock, bring to a boil, then simmer until pasta is tender, about 12-13 minutes. Add water if needed.
  • Stir in cream cheese and cheddar until melted and creamy. Season with salt and pepper to taste.
  • Garnish with sliced spring onions and chopped coriander if using. Serve and enjoy!

Notes

For extra spice, add more cayenne pepper or hot sauce.
