A flavorful homemade bread combining onions, cheese, and yeast for a delicious treat.

Ingredients

Yeast and liquids

  • 1 envelope active dry yeast
  • 0.25 cups lukewarm water
  • 2 cups warm buttermilk
  • 1/3 cup sugar
  • 0.25 cup melted butter (lukewarm not hot)
  • 1 teaspoon salt
  • 0.75 teaspoon baking soda
  • 1.5 cups extra sharp cheese (shredded or cubed small)

Onions

  • 2 cups chopped onions (caramelized)

Flour

  • 6 cups bread flour (more or less as needed)

Instructions 

  • Mix yeast, ginger, and 1 tsp sugar in water; let sit 5 min.
  • Add buttermilk, sugar, salt, and baking soda; mix well.
  • Stir in 3 cups flour until smooth, then add butter, onions, and cheese.
  • Gradually add remaining flour, knead until elastic, then let rise 1.5 hours.
  • Punch down, shape into loaves, let rise 45 min, then bake at 400°F for 30 min.

Notes

For a softer crust, cover the loaves after baking.
