A flavorful and easy-to-make roasted chicken dish with crispy potatoes and tender green beans, perfect for a satisfying meal.

Ingredients

Chicken

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 lb baby potatoes
  • 8 oz fresh green beans

Herb & Seasoning Mixture

  • 2 tbsp olive oil (for chicken)
  • 2 cloves garlic, minced
  • 1 tsp chopped rosemary
  • 1 tsp chopped thyme
  • 1/2 tsp salt (for chicken)
  • 1/4 tsp black pepper (for chicken)

Potatoes

  • 1 lb baby potatoes
  • 1 tbsp olive oil (for potatoes)
  • 1/2 tsp salt (for potatoes)
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper (for potatoes)
  • 1/2 tsp dried rosemary or thyme

Green Beans

  • 8 oz fresh green beans
  • 1 tbsp olive oil (for green beans)
  • Salt & pepper to taste Salt & pepper

Optional

  • 1 unit lemon slices (optional, for serving)

Instructions 

  • Preheat oven to 425°F (220°C). Mix olive oil, garlic, herbs, salt, and pepper; rub on chicken and place on baking sheet.
  • Halve potatoes, toss with olive oil, salt, garlic powder, pepper, and herbs; spread on sheet.
  • Roast for 30 minutes, then flip potatoes and add green beans tossed in olive oil and seasoning. Roast another 10-15 minutes until cooked.
  • Check that chicken reaches 165°F (75°C) and potatoes are golden. Serve with lemon slices if desired.

Notes

For extra flavor, squeeze lemon over the dish before serving.
