Ingredients

Dough

  • 2 cups all-purpose flour (260 grams)
  • 1/3 cup granulated sugar (67 grams)
  • 1/3 cup light brown sugar (67 grams)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup unsalted butter (170 grams)

Peach Filling

  • 4 medium peaches (about 1.4 pounds)
  • 1/2 cup light brown sugar (105 grams)
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 teaspoon corn starch
  • pinch kosher salt

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9-inch square pan and line with parchment.
  • Melt butter over medium-low heat until browned, then cool slightly.
  • Slice peaches into 8 segments, then into half-inch pieces. Mix with sugar, cinnamon, vanilla, corn starch, and salt.
  • Combine flour, sugars, baking powder, and salt. Add browned butter and mix into crumbly dough.
  • Press half of the crumble into the pan, spread peach filling over it, then top with remaining crumble.
  • Bake for 50-60 minutes until golden and bubbling. Cool, chill, then cut into 16 bars.

Notes

Chill the bars for best texture before serving.
