A delicious and healthy chia pudding infused with fresh peaches and vanilla, perfect for a quick breakfast or snack.

Ingredients

Dried ingredients

  • 3 tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • ½ to 1 cup fresh or frozen peaches, mashed or blended (Adjust amount for desired sweetness and texture)
  • 2 teaspoons maple syrup or chopped dates (optional)
  • ½ teaspoon vanilla extract
  • 2 tablespoons yogurt (optional, dairy-free or Greek)

Instructions 

  • Mix chia seeds, almond milk, peaches, vanilla, and sweetener in a bowl.
  • Stir well and let sit for a few minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Before serving, stir the pudding and top with yogurt, peach slices, or your favorite toppings.

Notes

You can adjust the sweetness by adding more or less sweetener or peaches.
