Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Crumb topping

  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold unsalted butter, cut into cubes

Cake batter

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt

Peaches

  • 1 1/2 cups fresh peaches, peeled and diced
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold unsalted butter, cut into cubes

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8x8 inch pan.
  • Mix flour, brown sugar, and cinnamon for crumb topping; cut in cold butter until crumbly. Refrigerate.
  • Whisk dry ingredients; beat butter and sugar until fluffy; add eggs and vanilla.
  • Alternate adding dry ingredients and sour cream to wet mixture; fold in peaches.
  • Pour batter into pan, sprinkle crumb topping, and bake 45-50 minutes.

Notes

Use ripe peaches for best flavor.
