A delightful combination of warm roasted peaches, crunchy granola, and creamy yogurt makes this a perfect breakfast or snack.

Ingredients

Granola

  • 1.5 cups oats
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • pinch salt
  • 0.5 cups shredded coconut (Sweetened or unsweetened)
  • 0.33 cups chopped pecans
  • 2 tbsp olive oil
  • 0.33 cups maple syrup
  • 0.5 tsp vanilla
  • 2 tbsp almond butter

Peaches

  • 3 medium peaches
  • 3 tbsp sugar

Yogurt

  • vanilla yogurt

Instructions 

  • Preheat oven to 325°F (160°C). Mix oats, cinnamon, nutmeg, salt, coconut, pecans, olive oil, maple syrup, vanilla, and almond butter to make granola. Bake until golden.
  • Slice peaches, toss with sugar, and let sit for 10 minutes. Spread on parchment-lined baking sheet.
  • Increase oven to 400°F (200°C) and roast peaches for 12-14 minutes until tender.
  • Assemble bowls with yogurt, warm peaches, and granola. Serve immediately.

Notes

Store granola in an airtight container for up to two weeks; keep peaches refrigerated for up to 3 days.
