A delicious and healthy chia pudding layered with fresh peaches and creamy yogurt, perfect for a quick breakfast or snack.

Ingredients

Liquid

  • 1 cup unsweetened almond milk
  • 0.5 cup fresh or canned peaches, diced (plus extra for topping)
  • 0.25 cup chia seeds
  • 1 tablespoon maple syrup or honey (optional)
  • 0.25 teaspoon vanilla extract
  • Pinch salt

Toppings

  • 2 tablespoons Greek yogurt or coconut cream (for layering or topping)

Instructions 

  • Blend almond milk, half of the diced peaches, maple syrup (if using), vanilla extract, and salt until smooth.
  • Pour the mixture into a bowl or jar, stir in chia seeds, and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes.
  • Once set, stir the pudding and spoon into glasses or jars.
  • Layer with remaining diced peaches and top with Greek yogurt or coconut cream.
  • Finish with additional peaches, granola, or honey before serving.

Notes

Use ripe peaches for the best flavor and adjust sweetness to taste.
