Delicious and wholesome peanut butter banana bars perfect for a quick snack or breakfast.

Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Wet ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 medium overripe bananas (mashed) (about 2/3 cup)
  • 1/2 cup peanut butter

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8-inch square pan.
  • Mix flour, oats, baking powder, and salt. Set aside.
  • Beat butter, sugars, egg, and vanilla until fluffy. Mix in bananas and peanut butter.
  • Gradually add dry mixture, mixing until combined. Spread batter in pan.
  • Bake for 40-45 minutes until edges are browned. Cool before cutting.
