These delicious and easy-to-make oatmeal cookies combine peanut butter, chocolate chips, and a hint of vanilla for a satisfying treat.

Ingredients

Dry ingredients

  • 1 cup oats
  • 1/2 cup oat flour
  • 1 cup peanut butter ((only ingredient should be peanuts or peanuts and salt))
  • 2 eggs eggs
  • 1/4 cup coconut sugar ((can sub any kind of sugar))
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • pinch sea salt

Add-ins

  • 1 cup chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix peanut butter, eggs, coconut sugar, maple syrup, and vanilla until combined.
  • Whisk in oats, oat flour, baking soda, and sea salt. Stir in chocolate chips.
  • Drop spoonfuls onto the baking sheet, flatten slightly, and top with extra chocolate chips and sea salt.
  • Bake for 7-10 minutes, then cool before serving.

Notes

For a gluten-free version, ensure oat flour is certified gluten-free.
