Delicious and easy-to-make peanut butter crunch bars with a chocolate topping, perfect for a quick treat or snack.

Ingredients

liquid sweetener

  • 0.75 cup maple syrup or other liquid sweetener
  • 0.5 cup peanut butter
  • 0.75 cup more peanut butter (optional) (see notes)
  • 0.25 tsp sea salt (optional, see notes)
  • 1 tsp vanilla extract
  • 3 cups rice puffs
  • 5 oz dark chocolate chips dairy-free

additional topping

  • 0.75 cup peanut butter (optional, for topping) (see instructions)

Instructions 

  • Line a 15 cm (6 inch) or 18 cm (7 inch) pan with parchment paper.
  • Mix liquid sweetener, 1/2 cup peanut butter, vanilla, and salt in a bowl.
  • Stir in rice puffs until well-coated, then press mixture into the prepared pan.
  • Optional: Spread 1/3 cup peanut butter on top of the mixture.
  • Melt chocolate chips and pour over the mixture, spreading evenly.
  • Refrigerate for about 60 minutes, then cut into bars and enjoy.

Notes

Use a hot knife to cut for cleaner edges. Store leftovers in an airtight container in the fridge.
