Delicious homemade granola bars packed with oats, peanut butter, and optional add-ins for a healthy snack.

Ingredients

Dry ingredients

  • 3 cups old-fashioned rolled oats (use verified gluten-free, if needed)
  • 1/3 cup honey or maple syrup (both work well and taste great but honey helps hold the bars together better)
  • 1/2 cup mini chocolate chips (optional)
  • 2 whole eggs (use flax egg for vegan-friendly)

Optional add-ins

  • pinch salt (omit if peanut butter is salted)
  • as desired walnuts, pecans, almonds, chia, sunflower, or pumpkin seeds, or dried fruit

Instructions 

  • Preheat oven to 350℉ (175℃).
  • Mix all ingredients in a large bowl; heat peanut butter if solid.
  • Line a 9x9 inch (23x23 cm) pan with parchment paper and press mixture firmly into it.
  • Sprinkle chocolate chips on top and press them in; bake for 15-17 minutes.
  • Cool completely before cutting into 16 bars.

Press bars firmly for better sticking; cool completely before cutting.
