A warm, comforting baked oatmeal with pecans and a hint of cinnamon, perfect for a nutritious breakfast or snack.

Ingredients

Cooking Oil Spray

  • 0.5 cup blended Old Fashioned Rolled Oats (use gluten-free if needed)
  • 0.25 cup Snickerdoodle Protein Powder (or vanilla protein powder)
  • 0.5 tsp ground Cinnamon
  • 0.5 tsp Baking Powder
  • 3 tbsp Unsweetened Apple Sauce
  • 2 tbsp Liquid Egg Whites (or 1 whole egg)
  • 1.7 fluid ounces Unsweetened Almond Milk (or any plant-based or regular milk)
  • 0.5 tbsp Brown Sugar (or brown sugar replacement)
  • 6 pieces unsalted raw Pecans (can double if desired)
  • 0.5 tbsp Pure Maple Syrup (or sugar-free syrup)

To Serve (optional): Pecan Butter

  • 0.5 to 1 tbsp Pecan Butter (homemade or store-bought)

Instructions 

  • Preheat oven to 180°C / 350°F. Spray a ramekin with cooking oil.
  • Mix oats, protein powder, cinnamon, and baking powder in a bowl.
  • Add apple sauce, egg whites, almond milk, and brown sugar; stir until combined.
  • Pour batter into ramekin, top with pecans, and drizzle with maple syrup.
  • Bake for 23-25 minutes until risen and a toothpick comes out clean. Cool for 5-10 minutes.
  • Drizzle pecan butter on top and serve warm.

Notes

Use fresh pecans for best flavor and consider doubling the pecans for extra crunch.
