Ingredients

Dough

  • 1.25 cups warm water (at 105-110°F)
  • 2.25 teaspoons active dried yeast (or one packet)
  • 1 tablespoon sugar

Yogurt Mixture

  • 0.75 cups Greek-style yogurt
  • 2 tablespoons extra virgin olive oil (plus a bit for cooking)
  • 2 teaspoons kosher salt

Flour

  • 3.75 cups all-purpose flour (plus a little more for kneading)
  • 0.25 cups finely chopped flat leaf parsley (if desired)

Instructions 

  • Mix warm water, yeast, and sugar; let sit until frothy, about 5 minutes.
  • Combine yogurt, olive oil, salt, and the frothy yeast mixture. Gradually add flour and knead until smooth.
  • Divide dough into 8 balls, let rest for 10 minutes.
  • Roll each ball into a flat circle and cook on a lightly oiled skillet until golden on both sides, about 2-3 minutes per side.
  • Optional: sprinkle with chopped parsley before serving.

Notes

For softer bread, let the dough rise longer before cooking.
