Ingredients

Rice and Soup Mixture

  • 1.5 cups long-grain white rice (uncooked)
  • 2 cans cream of chicken or cream of mushroom soup
  • 2 cups milk
  • 1 cup water
  • 1 envelope onion soup mix (1 oz)
  • 1.5 cups shredded cheddar cheese, divided
  • 3 pieces boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch dish.
  • Mix rice, soup, milk, water, and onion soup in a bowl. Pour into dish.
  • Sprinkle ½ cup cheese over the rice. Season chicken with salt and pepper, then place on top.
  • Cover with foil and bake for 1 hour 30 minutes. Remove foil, add remaining cheese, and bake 10–15 minutes.
  • Let rest 15–20 minutes before serving.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
