A comforting baked casserole combining tender chicken, flavorful rice, and cheesy goodness, perfect for a family dinner.
Ingredients
Rice and Soup Mixture

long-grain white rice (uncooked)

cream of chicken or cream of mushroom soup

milk

water

onion soup mix (1 oz)

shredded cheddar cheese, divided

boneless, skinless chicken breasts (or thighs)

Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch dish.
Mix rice, soup, milk, water, and onion soup in a bowl. Pour into dish.
Sprinkle ½ cup cheese over the rice. Season chicken with salt and pepper, then place on top.
Cover with foil and bake for 1 hour 30 minutes. Remove foil, add remaining cheese, and bake 10–15 minutes.
Let rest 15–20 minutes before serving.
Notes
Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
