Enjoy these soft, flavorful flatbreads made with mashed potatoes, perfect for a quick snack or side dish.

Ingredients

Potatoes

  • 3 medium-large potatoes (see instructions)
  • 1 cup flour (more for kneading, see notes)
  • 1 tsp baking powder
  • 0.5-0.75 tsp salt
  • 1 pinch nutmeg
  • 1 tbsp oil (plus more for frying)
  • 1/3 cup scallions (chopped)

Instructions 

  • Boil potatoes until fork-tender, then peel and mash.
  • Mix mashed potatoes with flour, baking powder, salt, nutmeg, oil, and scallions to form a dough, adding more flour if sticky.
  • Divide dough into 6-8 balls and roll into discs between oiled parchment paper.
  • Heat a lightly oiled skillet over medium heat, then cook each flatbread 2-4 minutes per side until golden.
  • Remove from pan, brush with garlic oil, sprinkle herbs, and serve warm.

Notes

Use fresh herbs and garlic oil for extra flavor.
