Enjoy these soft, flavorful flatbreads made with mashed potatoes, perfect for a quick snack or side dish.

Instructions
Boil potatoes until fork-tender, then peel and mash.
Mix mashed potatoes with flour, baking powder, salt, nutmeg, oil, and scallions to form a dough, adding more flour if sticky.
Divide dough into 6-8 balls and roll into discs between oiled parchment paper.
Heat a lightly oiled skillet over medium heat, then cook each flatbread 2-4 minutes per side until golden.
Remove from pan, brush with garlic oil, sprinkle herbs, and serve warm.
Notes
Use fresh herbs and garlic oil for extra flavor.
