Ingredients

  • 1 cup plain greek yogurt (full-fat or low-fat)
  • 1/2 cup natural sweetener (like honey or maple syrup)
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 cup oat flour (or blitzed oats)
  • 1/2 cup protein powder (neutral or vanilla whey)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (like chocolate chips or nuts)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Mix yogurt, sweetener, egg, and vanilla until smooth.
  • In another bowl, whisk oat flour, protein powder, baking soda, and salt.
  • Fold dry ingredients into wet until combined, then add mix-ins.
  • Scoop dough onto the sheet, flatten slightly, and bake for 10-12 minutes.
  • Cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

For a richer taste, use full-fat yogurt.
