Ingredients

Dry ingredients

  • 1 cup oat flour
  • 1 scoop vanilla or unflavored protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch salt

Wet ingredients

  • 1 large egg
  • 3/4 cup plain Greek yogurt
  • 1/2 cup milk
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips

Additional

  • as needed Butter or coconut oil

Instructions 

  • Whisk dry ingredients together in a bowl. In a separate bowl, whisk wet ingredients until smooth.
  • Gently fold wet into dry, then stir in chocolate chips. Let batter rest for 5-10 minutes.
  • Heat a pan with butter or coconut oil over medium heat. Pour 1/4 cup batter and cook until bubbles form, then flip and cook until golden.
  • Transfer cooked pancakes to a warm oven to keep warm until serving.

Notes

For extra flavor, top with fresh fruit or a drizzle of syrup.
