Ingredients

  • 1 cup long-grain white rice (rinsed and drained)
  • 2 cinnamon sticks cinnamon sticks (Ceylon preferred)
  • ¼ teaspoon kosher salt
  • 2 ½ cups water
  • 4 cups milk
  • 1 can (15-ounce) pumpkin puree
  • 1 cup granulated sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice

Instructions 

  • Combine rice, cinnamon sticks, salt, and water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Add milk, cover, and cook for 15 minutes, stirring halfway.
  • Stir in pumpkin puree, sugar, vanilla, and pumpkin pie spice; cook for 10 minutes, stirring occasionally.
  • Remove from heat and let sit for 15 minutes to thicken and cool.
  • Serve in bowls, topped with cinnamon, nuts, and cajeta if desired.
