Ingredients

Spice Mix

  • 4 tablespoons ground cinnamon
  • 2 tablespoons ground cardamom
  • 1.5 tablespoons ground ginger
  • 2 teaspoons ground nutmeg
  • 1 teaspoon ground allspice
  • 0.5 teaspoon ground cloves

Batter

  • 1.5 cups all-purpose flour
  • 2 tablespoons chai spice
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.5 cup sugar
  • 1 cup pumpkin puree
  • 0.5 cup plain greek yogurt
  • 0.25 cup avocado or vegetable oil
  • 3 teaspoons vanilla extract
  • 0.666 cups brown sugar
  • 0.33 cup all-purpose flour (for streusel)
  • 1.5 tablespoons chai spice (for streusel)
  • 4 tablespoons unsalted butter (for streusel)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Mix dry spices and flour for the streusel; cut in butter until crumbly.
  • In a bowl, combine pumpkin, eggs, yogurt, oil, vanilla, sugar, and brown sugar.
  • Mix wet ingredients into dry ingredients until just combined. Pour into prepared pan.
  • Sprinkle streusel on top and bake for 60 minutes or until a toothpick comes out clean.
