Ingredients

Wet ingredients

  • 1/2 cup pumpkin puree
  • 2 tablespoons maple syrup (or cane sugar)
  • 1 cup + 2 tablespoons vegan milk
  • 1 tablespoon melted vegan butter (or oil)
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground ginger (or pumpkin pie spice)
  • ¼ teaspoon all spice (or pumpkin pie spice)
  • ¼ teaspoon nutmeg (or pumpkin pie spice)
  • 1 1/4 cups flour (or oats ground in a food processor or in a coffee grinder)
  • 1 tablespoon baking powder

Instructions 

  • Mix pumpkin puree, maple syrup, vegan milk, melted vegan butter, salt, cinnamon, ginger, all spice, and nutmeg until well combined.
  • Sift in flour and baking powder, then gently fold until just combined, with some lumps remaining.
  • Let the batter rest for 5 minutes.
  • Heat a greased skillet over medium heat. Pour ¼ cup batter for each pancake and cook until bubbles form, then flip and cook until golden.
  • Serve hot with butter and maple syrup, and enjoy!

Notes

For extra fluffiness, sift the flour and baking powder.
