Instructions
Mix pumpkin puree, maple syrup, vegan milk, melted vegan butter, salt, cinnamon, ginger, all spice, and nutmeg until well combined.
Sift in flour and baking powder, then gently fold until just combined, with some lumps remaining.
Let the batter rest for 5 minutes.
Heat a greased skillet over medium heat. Pour ¼ cup batter for each pancake and cook until bubbles form, then flip and cook until golden.
Serve hot with butter and maple syrup, and enjoy!
Notes
For extra fluffiness, sift the flour and baking powder.
