Ingredients

Dry Ingredients

  • 1 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 teaspoons pumpkin spice (or to taste)

Wet Ingredients

  • ½ cup pumpkin purée (not pumpkin pie filling)
  • ¼ cup milk (2% or whole recommended)
  • ¼ cup canola oil (or vegetable oil)
  • 1 ½ teaspoons vanilla extract

Topping

  • ½ cup light brown sugar (packed)
  • ¼ cup granulated sugar
  • ½ cup chopped pecans

Water

  • ½ cup very hot or boiling water

Instructions 

  • Preheat oven to 350°F and prepare pan.
  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, then transfer to pan. Mix topping ingredients and sprinkle over batter.
  • Pour hot water evenly over the batter and bake for 40 minutes. Cool slightly before serving.

Notes

Place the pan on a baking sheet to prevent overflow. Cover with foil if top browns too quickly.
