Delicious and healthy pumpkin protein cookies perfect for a quick snack or post-workout treat.

Ingredients

Dry Ingredients

  • 2 cups Rolled Oats
  • 2.5 scoops Protein Powder (Vanilla or Chocolate)
  • 2 teaspoons Pumpkin Pie Spice
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt

Wet Ingredients

  • 1.5 cups Pumpkin Puree
  • 2 extra large Whole Eggs
  • 1.5 teaspoons Vanilla Extract
  • 0.5 cup Unsweetened Apple Sauce
  • 2 tablespoons Syrup (Sugar Free)
  • 3 tablespoons Honey

Instructions 

  • Combine all ingredients in a food processor or blender.
  • Process until well mixed.
  • Line a baking sheet with non-stick spray.
  • Spoon batter onto the sheet.
  • Optional: top with chocolate chips or toppings.
  • Bake at 350°F (176°C) for 10-15 minutes.
